2large eggs
3tablespoons sugar
1 1/2teaspoons baking powder
1/2teaspoonsalt
1 1/2cupsmilk
1/2teaspoonvanilla extract optional
Instructions
In a large mixing bowl, whisk together the flour, sugar, baking powder and salt.
In a separate mixing bowl, mix together the milk, eggs and optional vanilla extract.
Pour the wet ingredients into the dry ingredients, mixing until they are just combined. Be careful not to overmix the batter, as this can lead to tough pancakes.
Heat a griddle or large skillet over medium heat and coat it with a thin layer of butter.
Pour or scoop 1/4 cup of batter onto the griddle for each pancake. Cook until bubbles form on the surface of the pancake and the edges appear set, about 2-3 minutes. Flip the pancake and cook for an additional 1-2 minutes until golden brown.
Once cooked, transfer the pancakes to a plate and serve immediately with your favorite toppings, such as syrup, fruit or whipped cream.
