  • 1 griddle or large skillet
Ingredients
  
  • 1 1/2 cups all-purpose flour
  • 3 tablespooons unsalted butter for coating the griddle
  • 2 large eggs
  • 3 tablespoons sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 1/2 cups milk
  • 1/2 teaspoon vanilla extract optional
Instructions
 
  • In a large mixing bowl, whisk together the flour, sugar, baking powder and salt.
  • In a separate mixing bowl, mix together the milk, eggs and optional vanilla extract.
  • Pour the wet ingredients into the dry ingredients, mixing until they are just combined.
    Be careful not to overmix the batter, as this can lead to tough pancakes.
  • Heat a griddle or large skillet over medium heat and coat it with a thin layer of butter.
  • Pour or scoop 1/4 cup of batter onto the griddle for each pancake.
    Cook until bubbles form on the surface of the pancake and the edges appear set, about 2-3 minutes.
    Flip the pancake and cook for an additional 1-2 minutes until golden brown.
  • Once cooked, transfer the pancakes to a plate and serve immediately with your favorite toppings, such as syrup, fruit or whipped cream.
