Ingredients
  
  • 1 package of Jell-O Cook & Serve Lemon Pudding Mix
  • 1 9- inch pie crust pre-baked
  • 1 cup sugar
  • 1 cup water
  • 3 egg yolks
  • 3 egg whites
  • 1/4 teaspoon cream of tartar
  • Fresh lemon zest optional for garnish
Instructions
 
  • In a medium saucepan, combine the Jell-O lemon pudding mix, 1 cup sugar and 1 cup water.
    Stir the mixture until it is well combined.
  • In a separate bowl, whisk 3 egg yolks.
    Gradually blend the egg yolks into the saucepan with the lemon pudding mixture, stirring constantly.
    Add in fresh lemon juice according to the package directions and continue stirring.
  • Place the saucepan on medium heat and cook until the mixture comes to a full boil.
    Be sure to keep stirring to avoid any lumps or uneven cooking.
    Once it reaches a boil, remove the saucepan from the heat and let it cool for about 5 minutes.
  • After the lemon filling has cooled slightly, pour it into the pre-baked 9-inch pie crust.
    Set aside.
  • In a large bowl with a mixer, beat the 3 egg whites and the cream of tartar on high speed until foamy.
    Gradually add 1/3 cup sugar into the egg whites and continue beating until stiff peaks form.
  • Carefully spread the meringue over the lemon filling, making sure to cover the entire surface of the pie.
    You can create decorative peaks with a spatula for a more visually appealing finish.
  • Preheat your oven to 350°F (175°C) and bake the pie for 10 to 15 minutes or until the meringue is golden brown.
    Keep a close eye on it to ensure the meringue doesn't burn.
  • Once the Jello Lemon Meringue Pie is out of the oven, let it cool completely before serving.
    Optionally, garnish with fresh lemon zest for an extra touch of flavor.
