Ingredients
  
  • 1 1/2 cups all-purpose flour
  • 3/4 cup unsalted butter softened
  • 1/4 cup caster sugar
  • 2 eggs beaten
  • 1 teaspoon Baking Powder
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • Green food coloring optional
  • Dark chocolate or powdered sugar for decoration optional
Instructions
 
  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a medium-sized bowl, mix the all-purpose flour and baking powder together.
    Set aside.
  • In a large bowl, use an electric mixer to cream the softened unsalted butter and sugar together until smooth and creamy.
  • Add the beaten eggs to the butter and sugar mixture, one at a time, mixing thoroughly after each addition.
    Stir in the vanilla and almond extracts.
  • Gradually add the dry ingredients to the wet mixture, mixing until a smooth cookie dough forms.
  • If you'd like to make green leaf cookies, add a few drops of green food coloring to the dough and mix until evenly colored.
  • Transfer the cookie dough to a piping bag fitted with a leaf-shaped nozzle.
    Pipe leaf-shaped cookies onto the parchment-lined baking sheet, spacing them about 2 inches apart.
  • Place the baking sheet in the preheated oven and bake the cookies for 10-12 minutes or until the edges are slightly golden.
  • After baking, remove the cookies from the oven and let them cool on a wire rack.
    If desired, drizzle dark chocolate or sprinkle powdered sugar over the cooled cookies for extra decoration.
