Cooking the onions until they're deeply golden makes all the difference in the final result. Underdo them, and you'll miss out on a lot of the depth they bring.
I make sure my curry powder hits the hot pan before any liquids go in to bring out the best of this spice.
Another tip? Add a handful of chopped cilantro at the end to bring extra freshness that ties everything together.
I always pair this with basmati rice, but a piece of warm naan on the side never hurts!

  • 2 lbs Chicken Breasts
  • 2 tbsp Olive Oil
  • 1 tbsp Curry Powder
  • 1 Onion diced
  • 2 cloves Garlic minced
  • 1 cup Chicken Broth
  • 1 cup Coconut Milk
  • 1 tsp Salt
  • 1 tsp Black Pepper

  • Preheat your oven to 350 degrees Fahrenheit. This helps ensure the chicken cooks evenly.
  • Place the chicken breasts on a baking sheet. Rub them with olive oil, salt, and black pepper.
  • Bake the chicken for 25-30 minutes. While the chicken cooks, prepare the curry sauce.
  • In a large skillet, sauté the onion and garlic until translucent. Add the curry powder and stir for another minute.
  • Pour in the chicken broth and coconut milk. Simmer the sauce until thickened. Combine with the baked chicken in the skillet.
