Ingredients

  • 1.5 lbs of potatoes cut into 1-2 inch pieces
  • 2 tbsp oil preferably olive oil
  • 4 cloves of garlic minced
  • 2 green onions thinly sliced
  • 3 tbsp honey
  • 3 tbsp melted butter
  • 2 tbsp soy sauce
  • 1 tsp dry mustard optional
  • 1/4 tsp red pepper flakes optional
  • Salt and pepper to taste
Instructions

  • Begin by prepping your ingredients.
Cut your potatoes into 1-2 inch pieces, slice the green onions, and mince the garlic cloves.
    Set them aside.
  • Heat up the oil in a large pan over medium-high heat.
Once the oil is heated, add the potatoes and sauté for 5-7 minutes or until they become golden brown.
  • Reduce the heat to medium, and add the minced garlic to the pan.
Sauté the garlic and potatoes together for about 1-2 minutes until the garlic becomes fragrant.
  • Season the potatoes and garlic with salt and pepper to your preference at this time.
  • In a small bowl, combine the melted butter, honey, soy sauce, and dry mustard if you're using it.
Mix these ingredients well until fully incorporated.
  • Carefully pour the honey garlic sauce over the sautéed potatoes in the pan, making sure each piece of potato is evenly coated in the sauce.
  • Allow the potatoes to simmer in the honey garlic sauce over medium-low heat for 10-12 minutes or until the potatoes are tender and the sauce has thickened.
  • Once the potatoes are cooked through and the sauce has thickened, remove the pan from the heat.
Garnish the honey garlic potatoes with the thinly sliced green onions and red pepper flakes if desired.
