Crack the eggs into a cold, nonstick skillet.
Add two tablespoons of butter.
Avoid mixing the eggs at this stage.
Place the skillet on medium-high heat.
Stir continuously with a spatula.
Do not whisk or beat the eggs beforehand.
Once the eggs begin to thicken, remove the skillet from the heat.
Keep stirring for around 10 seconds.
Return it to the heat and continue this process.
Remove the pan from heat again when the eggs reach the desired softness.
Stir in crème fraîche to stop the cooking process.
Season your eggs with salt.
Taste and adjust if needed.
