Ingredients
  
  • 2 Racks of Lamb
  • 2 tbsp Olive Oil
  • Salt
  • Pepper
  • 1 cup Bread Crumbs
  • 1/2 cup Parsley chopped
  • 1 tbsp Thyme chopped
  • 1 tbsp Rosemary chopped
  • 2 tbsp Dijon Mustard
Instructions
 
  • Preheat your oven to 400°F.
  • Season the lamb racks with salt and pepper to taste.
  • Heat olive oil in a large skillet over medium-high heat.
  • Sear the lamb on all sides until it’s brown.
  • Remove from the skillet and place in a baking dish.
  • Mix bread crumbs, parsley, thyme, and rosemary in a bowl.
  • Brush the lamb with Dijon mustard, and coat it with the herb mixture.
  • Pat gently to ensure it sticks.
  • Transfer the coated lamb back to the baking dish.
  • Place in the preheated oven.
  • Bake for 15 to 20 minutes for medium-rare.
  • Remove from the oven and allow it to rest for 5 minutes before slicing and serving.
