Preheat your oven to 400°F.
Season the lamb racks with salt and pepper to taste.
Heat olive oil in a large skillet over medium-high heat.
Sear the lamb on all sides until it’s brown.
Remove from the skillet and place in a baking dish.
Mix bread crumbs, parsley, thyme, and rosemary in a bowl.
Brush the lamb with Dijon mustard, and coat it with the herb mixture.
Pat gently to ensure it sticks.
Transfer the coated lamb back to the baking dish.
Place in the preheated oven.
Bake for 15 to 20 minutes for medium-rare.
Remove from the oven and allow it to rest for 5 minutes before slicing and serving.
