Preheat your oven to 350°F.
Heat olive oil in a large skillet over medium-high heat.
Sear the beef chuck roast on all sides until it’s brown.
Transfer the seared meat to a slow cooker.
In a separate bowl, mix the beef broth, onion soup mix, and apple sauce.
Pour this mixture over the roast in the slow cooker.
Add carrots, potatoes, onion, and celery on top of the meat.
Sprinkle the herbs over everything.
Cover and set the slow cooker on a low setting.
Let the roast cook for about 8 hours or until the meat is tender.
The vegetables should also be soft and full of flavor.
Once done, let the roast rest for a few minutes before slicing.
Serve with the cooked vegetables for a satisfying meal.
