Ingredients
  
  • 3 lbs Beef Chuck Roast
  • 2 tbsp Olive Oil
  • 1 cup Beef Broth
  • 1 packet Onion Soup Mix
  • 1 cup Apple Sauce
  • 4 Carrots sliced
  • 4 Potatoes quartered
  • 1 Onion chopped
  • 2 Celery Stalks sliced
  • 2 tsp Herbs such as Thyme or Rosemary
Instructions
 
  • Preheat your oven to 350°F.
  • Heat olive oil in a large skillet over medium-high heat.
  • Sear the beef chuck roast on all sides until it’s brown.
  • Transfer the seared meat to a slow cooker.
  • In a separate bowl, mix the beef broth, onion soup mix, and apple sauce.
  • Pour this mixture over the roast in the slow cooker.
  • Add carrots, potatoes, onion, and celery on top of the meat.
  • Sprinkle the herbs over everything.
  • Cover and set the slow cooker on a low setting.
  • Let the roast cook for about 8 hours or until the meat is tender.
  • The vegetables should also be soft and full of flavor.
  • Once done, let the roast rest for a few minutes before slicing.
  • Serve with the cooked vegetables for a satisfying meal.
