Denny's Bourbon Chicken Skillet

I always marinate the chicken for at least an hour to let the sauce really soak in, giving it an even richer taste.

Ingredients
  
  • 4 Chicken Breasts
  • 1 Red Bell Pepper
  • 1 Green Bell Pepper
  • 1 Onion
  • 1/4 cup Bourbon
  • 1/4 cup Brown Sugar
  • 1/4 cup Soy Sauce
  • 2 tbsp Olive Oil
  • 4 Red Potatoes
  • Salt
  • Pepper
Instructions
 
  • Slice the onion, red bell pepper, and green bell pepper.
  • Cut the chicken breasts into chunks and the red potatoes into cubes.
  • In a large skillet, heat olive oil over medium heat.
  • Add chicken chunks and cook until lightly browned.
  • Remove chicken from skillet.
  • In the same skillet, toss in the sliced onions, and bell peppers.
  • Sauté until softened, about 3 to 4 minutes.
  • Pour in the Bourbon and simmer for 2 minutes.
  • Add brown sugar, soy sauce, salt, and pepper to the skillet.
  • Mix until well combined with the vegetables.
  • Return chicken to the skillet.
  • Add potato cubes, and cover the skillet.
  • Cook over low heat for 20 minutes until potatoes are tender and chicken is cooked through.
