  • 2 Celery Stalks chopped
  • 2 Carrots diced
  • 1 Medium Yellow Onion diced
  • 1 lb Potatoes sliced
  • 1 ½ cups Green Beans
  • 1 can Diced Tomatoes 28 oz.
  • 1 cup Peas
  • 2 cups Lima Beans
  • 2 cups Corn
  • 4 cups Vegetable Juice
  • 3 Beef Bouillon Cubes
  • Salt to taste
  • Pepper to taste
Instructions
 
  • Start by heating a large pot over medium heat.
  • Add the diced onions, celery, and carrots.
  • Cook them until they are soft and fragrant.
  • Pour in the vegetable juice and let it heat up.
  • Add the beef bouillon cubes, stirring until they are fully dissolved.
  • Add the potatoes, green beans, and diced tomatoes.
  • Cover the pot and let the mixture simmer for about 15 minutes, allowing the flavors to meld together.
  • Stir in the peas, lima beans, and corn.
  • Season with salt and pepper to your taste.
  • Let the soup continue to simmer for another 20 minutes, ensuring all vegetables are tender.
  • Serve hot and enjoy!
