Ingredients
  
  • 1 tablespoon butter
  • 1/4 cup diced ham
  • 1/4 cup chopped onions
  • 1/4 cup chopped bell peppers
  • 3 large eggs
  • 1/4 cup water
  • Salt and pepper to taste
  • Nonstick vegetable spray
  • 1/2 cup shredded cheddar cheese
Instructions
 
  • Melt the butter. In a saucepan over medium heat, place 1 tablespoon of butter and allow it to melt completely.
  • Add the vegetables and ham. Once the butter is melted, add the chopped onions, bell peppers and diced ham.
    Cook the mixture until the onions and peppers are soft but not browned and the ham is heated through.
  • Prepare the egg mixture. In a separate bowl, add the eggs, water, salt, and pepper.
    Beat the mixture well, but avoid over-beating to preserve a fluffy texture.
  • Preheat a nonstick pan over medium-high heat and coat it with nonstick vegetable spray.
    Pour the egg mixture into the preheated pan and allow it to cook for a few minutes until it begins to set.
  • Add the cooked ham and vegetable mixture to one side of the omelet.
    Cook for another 2-3 minutes, until the eggs are almost fully set but still slightly moist on top.
  • Sprinkle your desired amount of shredded cheddar cheese onto the ham and vegetable-laden half of the omelet.
  • Fold the omelet.
    Using a spatula, gently fold the un-topped half of the omelet over the filling, creating a half-moon shape.
  • Continue cooking the omelet until the cheese is melted and the eggs are fully cooked.
    Slide the finished Colorado Omelette onto a plate and serve immediately.
