Ingredients
  
  • 1 cup cooked pinto beans
  • 1 tablespoon canola oil
  • 1 cup Mexican chorizo casing removed, finely chopped
  • 1 small white onion finely chopped
  • 2 garlic cloves minced
  • 1/2 cup bean broth use the liquid from cooking the beans
  • Kosher salt to taste

  • Remove the casings from the chorizo sausage and finely chop it.
    Finely chop the white onion and mince the garlic cloves.
    If you're using canned or pre-cooked pinto beans, rinse them and reserve about 1/2 cup of the liquid from the beans for later use.
  • Heat a medium sauté pan on medium heat.
    Add the chorizo and cook until it turns golden in color, about 6 minutes.
    Make sure to break the chorizo into smaller pieces with a wooden spoon during this process.
    Once cooked, remove the chorizo from the pan and set aside on a plate lined with paper towels.
  • In the same pan with the remaining chorizo fat, add 1 tablespoon of canola oil and heat on medium-high heat.
    Add the chopped onion and garlic, and cook until the onion becomes translucent, about 3-5 minutes.
  • Add the cooked pinto beans to the pan, followed by the cooked chorizo.
    Stir everything together and cook for another 2-3 minutes, allowing flavors to meld.
  • Pour the reserved bean broth into the pan, then lower the heat to medium.
    Use a potato masher or the back of a wooden spoon to mash the beans until they are smooth with some chunks remaining.
    Stir well to incorporate all ingredients evenly.
    Adjust the taste with kosher salt as desired.
  • Serve your chorizo refried beans immediately as a side dish or as a filling for tacos, burritos, or other Mexican favorites.
