Chili's Lime Rice Recipe

This zesty accompaniment is an amazing accompaniment to a variety of cuisines, whether it’s with spicy tacos or a savory stir-fry.
I love that you can use either white or brown rice for this recipe, offering flexibility depending on your preference or dietary needs.
A great tip for enhancing the flavor is to toast the rice slightly before adding liquid, as it brings out a nuttier flavor and helps achieve a perfect texture.

Ingredients

  • 1 cup Rice
  • 2 cups Water or Chicken Broth for more flavor
  • 1 tbsp Butter
  • 2 tbsp Lime Juice
  • 1 tsp Lime Zest
  • 1/4 cup Cilantro chopped
  • 1/2 tsp Salt
  • 1/2 teaspoon Garlic powder optional, for a hint of savory flavor.
Instructions

  • Rinse the rice in cold water until the water runs clear.
  • This helps remove excess starch and prevents clumping.
  • In a medium pot, bring 2 cups of water to a boil.
  • Add 1 cup of rice, the butter, and salt.
  • Reduce heat to low, cover, and simmer for about 15 minutes until the water is absorbed.
  • Once the rice is cooked, remove it from heat.
  • Let it sit covered for around 5-10 minutes.
  • This allows the rice to finish cooking and prevents it from sticking.
  • Add lime juice, lime zest, and garlic powder (if preferred) to the rice.
  • Gently stir to combine the flavors throughout the dish.
  • Fold in the chopped cilantro, ensuring it's evenly distributed.
  • Serve the rice while warm and enjoy the fresh flavors.
