Ingredients
  
  • 2 boneless skinless chicken breasts
  • 2 tsp salt
  • 2 tsp garlic powder
  • 1 small onion
  • 3/4 cup chicken broth
  • 2 tsp black pepper
  • 2 tsp unsalted butter
  • 1 cup white wine
  • 1/2 tsp fresh tarragon leaves
  • 2 tbsp olive oil
Instructions
 
  • Turn your microwave oven on and preheat it to 475 degrees before beginning the prep.
  • Next, mix salt, pepper,and garlic powder in a zipper bag. Shake the mix well.
  • Set the bag aside, and take the chicken out.
  • Gently grease the meatusing olive oil and thoroughly massage it.
  • This firmness would allow the oil to seep into the meat and make it more tender.
  • Once you coat the chicken thoroughly, grab the zipper bag. Sprinkle the mix overthe meat while occasionally rubbing it in for proper seasoning.
  • Take a baking pan, grease it with olive oil, and place it on medium heat.
  • Once you sear the chicken evenly for a couple of minutes, add some tarragon to it. Make sure the tarragon leaves are finely cut.
  • Next, add the chicken broth to the dish to moisten the meat. This would also keep theoven from smoking.
  • Once everything is in place, put the dish in the oven. Set the timer to 10 minutes and let the chicken roast.
  • Once the timer is up,transfer the chicken to a cutting board after wrapping it in foil paper.
  • Let it rest for a few minutes and adjust to room temperature.
  • Saute some diced onion in the remains of the skillet. This adds flavor to the mix.
  • Add some more broth tothe pan to gather all remains and crumbs.
  • While the sauce cooks,you can remove the meat from the foil and chop the chicken breasts into even pieces.
  • Most people prefer2-inch pieces for uniformity.
  • Finally, add some white wine to the pan and let the sauce thicken.
  • You can add the wine according to your preference to reach your desired consistency.
  • Please remember that excessive white wine can make the gravy taste too citrusy.
  • Now, bring the cut-up chicken pieces back to the pan.
  • You can tell if your sauce has reached the proper consistency by how the chicken pieces are in it.
  • If the pieces are covered entirely in the liquid, you should let them simmer.
  • The ideal ratio would be so that the tops of the pieces are slightly visible.
  • Once you add all the chicken pieces to the pan, cover it with a lid and let it cook for roughly 35 minutes.
  • Unless you are in arush, set the heat on medium-low.
  • This temperature would ensure that the chicken meat cooks to the core.
  • Towards the end, when the dish is almost cooked, turn the heat up.
  • Lastly, add the butter to the pan and wait for it to blend in with the sauce.
  • The butter will add arich and creamy texture to the gravy while adding more flavor to the chicken pieces.
  • Once you are satisfied with how the dish looks, taste the sauce.
