Ingredients
  
  • 1 pound salmon fillet skin removed
  • 8 ounces of pasta of your choice e.g., linguine, spaghetti
  • 2 tablespoons olive oil
  • 2 tablespoons Cajun seasoning
  • 1 tablespoon Dijon mustard
  • 1/2 cup sun-dried tomatoes chopped
  • 1 clove garlic minced
  • 1 cup heavy cream
  • Juice of 1 lemon
  • Kosher salt and black pepper to taste

Instructions
 
  • Pat the salmon fillets dry with paper towels.
    Season them with kosher salt, black pepper, and 1 tablespoon of the Cajun seasoning on both sides.
    In a large skillet, heat 1 tablespoon of olive oil over medium heat.
    Place the salmon fillets in the pan and cook them for 3-5 minutes per side, depending on the thickness of the fillets.
    When the salmon is cooked through, remove it from the pan and set aside.
  • Cook your pasta according to package instructions until it's al dente.
    Drain and set aside.
    In the same skillet you used for the salmon, add 1 tablespoon of olive oil, the minced garlic, and chopped sun-dried tomatoes.
    Cook for 1-2 minutes, and then add the Dijon mustard and the remaining tablespoon of Cajun seasoning.
    Stir to combine.
  • Pour the heavy cream into the skillet, followed by the lemon juice.
    Stir well to combine, and cook the sauce over medium heat for about 5 minutes or until it thickens slightly.
  • Break the cooked salmon into bite-sized pieces and add them to the skillet with the sauce.
    Stir in the cooked pasta, tossing everything together until the pasta is well coated with the sauce.
    Serve your homemade Cajun Salmon Pasta in bowls, garnished with fresh basil if desired.
