  • 1 pound Dry pinto beans
  • 1 Large yellow onion, diced
  • 3 Cloves garlic, minced
  • 1 Green bell pepper, diced
  • 2 Green onions, sliced
  • 2 tsp Kosher salt
  • 1 tsp Black pepper
  • 1 tsp Cayenne pepper
  • 1 tsp Chili powder
  • 1 tsp Garlic powder
  • Garlic powder
Instructions
 
  • Rinse your pinto beans under cold water to remove any debris.
    Place them in a large pot and add water until the beans are covered by two inches. Soak overnight, or for at least 8 hours.
    After soaking, drain and rinse the beans.
  • In the same pot, heat a bit of oil over medium-high heat.
    Add the diced yellow onion, minced garlic, and diced green bell pepper.
    Sauté until the onion is translucent and the bell pepper softens.
  • Return the pinto beans to the pot with the sautéed vegetables.
    Pour in fresh water to cover the beans by two inches.
  • Add the kosher salt, black pepper, cayenne pepper, chili powder, and garlic powder to the pot.
    Stir to distribute the seasonings evenly.
  • Bring the mixture to a boil, then reduce the heat to medium, allowing the beans to simmer.
    This slow cooking process will take approximately 1.5 to 2 hours.
    Stir occasionally to prevent sticking, and add more water if necessary to keep the beans submerged.
  • Once the beans are tender and the flavors melded, taste and adjust the seasonings if needed.
    The cooking time may vary depending on the desired tenderness of the beans and personal taste.
    Add the sliced green onions during the last few minutes of cooking for a pop of color and freshness.
