  • 35 oz fresh cranberries
  • 3 tbsp butter
  • 3 tbsp lemon juice
  • 3 tbsp curry powder
  • 18 oz sugar
  • TT salt

  • Add the butter to a medium saucepan and let it melt and heat up over medium heat.
    Once the butter has melted, add in the cranberries and make sure to stir the mixture constantly to prevent the fruit from sticking to the bottom of the pan.
    If necessary, turn down the heat and allow the fresh cranberries to cook for 5-10 minutes.
  • Once you notice that the cranberries have started dissolving, it is time to add the remaining ingredients.
    Pour in the lemon juice, then add the curry powder, and start adding the sugar slowly, making sure to stir the pot constantly.
    The constant stirring will not only prevent the sauce from burning, but it will help the sugar dissolve in the cranberry mixture.
  • Let the cranberry relish cook on low for another 10 minutes, or as long as it needs for the sugar to dissolve completely.
    In case you've used frozen cranberries in place of fresh ones, they'll cook much faster than the fresh ones. Therefore, after 10 minutes of cooking, ensure that the cranberries are cooked to your liking.
  • Prepare the jars for your Bob Evans cranberry relish by properly washing and sterilizing them.
    Pour a little bit of relish into the jar, and allow the jar to adapt to the temperature thanks to the steam.
    Now pour more relish until you've filled the jar, then close it right away to create a vacuum.
  • Position the jars upside down and let them sit for at least 10 minutes. Once they've cooled down completely, you can store them in the fridge.
