Ingredients
  
  • ¼ cup water
  • ¾ cup sugar
  • 10 egg yolks
  • 1 tablespoon unflavored gelatin
  • 1 pinch kosher salt
  • 1 vanilla bean split
  • 1 tablespoon lemon juice
  • 2 cups banana puree
  • ¼ cup moonshine
  • 40 vanilla wafers
  • 3 large sliced bananas
  • 3 tablespoons plain yogurt
  • 2 cups heavy cream
Instructions
 
  • In a mixing bowl, combine the egg yolks, ¾ cup sugar, a pinch of kosher salt and lemon juice.
    Whisk until well combined.
    In a saucepan, heat the ¼ cup of water and dissolve the unflavored gelatin. 
    Add the heavy cream and the vanilla bean to the saucepan and heat gently until warm.
    Remove the vanilla bean, and slowly pour the cream mixture into the mixing bowl with the egg yolks, whisking constantly to prevent the yolks from curdling.
  • Place the custard mixture over medium heat and cook until it begins to thicken, stirring constantly.
    Once thickened, remove the custard from heat and strain it through a fine-mesh strainer to remove any lumps.
    Stir in the banana puree and mix well.
  • Let the custard cool slightly before carefully stirring in the moonshine.
    Be aware that high-proof alcohol is flammable, so make sure to be cautious and not cook the mixture with the moonshine.
    Remember that consumption of alcohol can be harmful if not done responsibly
  • In a separate bowl, combine the 3 tablespoons of plain yogurt with the 2 cups of heavy cream.
    Slice the bananas, crush the vanilla wafers and have them on hand for the assembly process.
  • In glass jars or individual serving dishes, begin layering the dessert by placing a layer of crushed vanilla wafers, followed by banana slices and then a layer of banana custard mixture.
    Repeat the layers until all the ingredients are used up
  • Cover the jars or dishes and refrigerate the banana pudding moonshine for at least 2 hours, preferably overnight, to allow the flavors to meld together.
