Ingredients
  
  • 2 lbs Chicken breasts
  • 1 cup Monterey Jack cheese grated
  • 5 oz Bell peppers sliced
  • 1 cup Italian dressing plus 2 tbsp for peppers & Onion
  • 3 tbsp Canola oil
  • 4 cups Mashed potatoes
  • 1/2 Onion sliced
Instructions
 
  • Preheat your oven to 375 degrees Fahrenheit.
    Pound chicken breasts to an even thickness, then marinate them in Italian dressing for at least 30 minutes.
    Heat a cast-iron skillet over medium heat until very hot.
    Add canola oil, sliced bell peppers, and onions.
  • Cook until caramelized, then remove from the skillet and set aside.
    Add the marinated chicken to the skillet and cook until browned on both sides.
    Remove the skillet from the heat and top the chicken with the caramelized peppers and onions.
    Sprinkle the grated Monterey Jack cheese over the top of the peppers and onions.
  • Place the skillet in the preheated oven and bake for 15-20 minutes or until the cheese is melted and bubbly.
    While the skillet is baking, heat up the mashed potatoes in a separate pot.
    Once the skillet is done baking, remove from the oven and sprinkle with chopped parsley.
  • Serve the sizzling chicken and cheese straight from the skillet with a side of mashed potatoes.
