Equipment
  • 1 heavy-bottomed pan
  • 1 Slotted spoon
  • 1 mixing bowl
Ingredients

  • 4-5 medium-sized potatoes
  • olive oil for frying
  • salt and pepper
  • garlic powder
  • green onion
  • toppings e.g. chili, cheese, salsa, guacamole, sour cream
Instructions

  • Begin by preparing your potatoes.
Wash, peel and cut 4-5 medium-sized potatoes into your preferred shape (French fries, wedges, or cubes).
  • Next, heat a generous amount of olive oil in a heavy-bottomed pan over medium-high heat.
Make sure there's enough oil to cover the potatoes.
  • Once the oil is hot, carefully add the potatoes to the pan.
Be cautious of any oil splatters.
  • Fry the potatoes until they become crispy and golden brown.
Ensure that you're turning them occasionally to get an even color on all sides.
  • Now, use a slotted spoon to remove the potatoes from the pan and place them on a paper towel-lined plate to absorb any excess oil.
  • In a large mixing bowl, season your crispy potatoes with salt, pepper and garlic powder to taste.
Ensure that you're evenly coating them with the seasoning.
  • To assemble the Papas Locas, first, arrange the seasoned potatoes on a serving platter.
  • Top your dish with chopped green onions and any additional ingredients you've chosen, like chili, cheese, salsa, guacamole or sour cream.
