Cook your lobster and remove the shells
Heat butter in a pot and add the shells to develop umami
Add mirepoix and minced garlic and cook until vegetables soften.
Sprinkle flour over the vegetables to create a thickened base and cook for a few minutes.
Pour in sherry and let it evaporate before adding the lobster cooking liquid or stock and bay leaf.
Reduce heat and simmer for 30 minutes.
Puree the vegetable mixture until smooth and return to pot.
Add cooked lobster meat and let everything meld together.
