Ingredients
  
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 cup packed brown sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 1/2 cups milk chocolate chips
  • 1 cup white chocolate chunks optional
Instructions
 
  • Before you begin, preheat your oven to 375°F (190°C).
    Line a large baking sheet with parchment paper.
    Make sure your butter is at room temperature before starting the process.
  • In a medium mixing bowl, combine the all-purpose flour, 1 teaspoon baking soda, and 1/2 teaspoon salt.
    Whisk together these dry ingredients and set the bowl aside.
  • In a separate large mixing bowl, use a paddle attachment or a hand mixer to beat together the softened unsalted butter, granulated sugar, and brown sugar until the mixture is creamy and well combined.
    Once it's smooth, add the vanilla extract and mix well.
    Add the eggs one at a time, ensuring each is fully incorporated into the mixture before adding the next.
  • Gradually add your prepared dry ingredients to the wet ingredients, mixing slowly to avoid overmixing the cookie dough.
    Continue to mix until everything is evenly combined and there are no visible streaks of flour.
  • Add in the milk chocolate chips and white chocolate chunks (if using) into the cookie dough.
    Gently fold or mix them in until evenly distributed.
  • Using a rounded tablespoon or a cookie scoop, portion out the dough into balls.
    Evenly space the dough balls on the prepared baking sheet, making sure to leave room for the cookies to spread as they bake.
  • Bake the cookies in the preheated oven for 8 to 10 minutes or until the edges are golden brown and the centers are set.
    Keep a close eye on the cookies to avoid overbaking them.
  • Remove the cookies from the oven and let them cool on the baking sheet for 2-3 minutes before transferring them to a wire rack to cool completely.
    Once cooled, store your Jimmy John's cookies in an airtight container at room temperature.
