  • 2 Fillet Steaks 6 oz. each
  • 1 tsp Salt
  • 1 tsp Black Pepper
  • 1 tbsp Olive Oil
  • 2 tbsp Butter
  • 3 sprigs Thyme
  • 2 sprigs Rosemary
  • 3 cloves Garlic smashed

  • Remove the fillet steaks from the refrigerator 30-60 minutes before cooking.
  • This allows them to reach room temperature, ensuring even cooking.
  • Preheat your oven to 360°F.
  • At the same time, heat a medium cast iron skillet over high heat.
  • Add olive oil to the skillet.
  • Season the steaks generously with salt and black pepper.
  • Place them in the hot skillet.
  • Sear each side for 2-3 minutes until a golden-brown crust forms.
  • Add butter, thyme, rosemary, and smashed garlic to the skillet.
  • Spoon the melted butter over the steaks as they cook for added flavor.
  • Transfer the skillet to the preheated oven.
  • Cook the steaks for 5-6 minutes for medium-rare or longer for your desired doneness.
