Equipment
  • 1 dutch oven
Ingredients

  • 2 cups black beans
  • 2 tablespoons olive oil
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 2 chipotle peppers chopped (preferably canned in adobo sauce)
  • 1 teaspoon chipotle chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon Mexican oregano
  • 1 bay leaf
  • Kosher salt to taste
Instructions

  • Start by heating 2 tablespoons of olive oil in a Dutch oven or large pot over medium-high heat.
Add the diced onion and cook until the onion softens and turns translucent.
Mix in the minced garlic and cook for an additional 30 seconds or until the garlic becomes fragrant.
  • To the pot, stir in the chopped chipotle peppers, chipotle chili powder, ground cumin, Mexican oregano, and bay leaf.
These ingredients, along with the onion and garlic, will give your Chipotle Black Beans their distinct and mouthwatering flavor.
  • Carefully add the black beans to the pot, making sure that they are well-coated with the mixture of spices, onion, and garlic.
Ensure that they're immediately immersed in the concoction, absorbing the chipotle-flavored liquid.
  • Pour enough water into the pot to cover the black beans completely.
Once the water is added, seasoning your Chipotle Black Beans is time.
Add kosher salt to taste and stir the mixture well to combine the flavors evenly.
  • Bring the pot to a gentle boil, then reduce the heat to medium-low, allowing the beans to simmer for approximately 1 hour or until tender.
Ensure that the beans are submerged throughout the cooking process, and add more water if needed.
The Chipotle Black Beans dish is now ready to serve and be enjoyed by all.
