For Roast- 1 chunk 5lbs sirloin tip roast
- 1 stick of melted butter
- 4 cloves of fresh garlic
- ½ tsp oregano
- ½ tsp cayenne pepper
- ½ tsp fresh thyme
- 1¼ tbsp paprika
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp of black pepper
- ½ tbsp salt
For Sauce- 1 cup dairy sour cream
- ½ cup prepared horseradish
- 2 tbsp of milk
- 1 tbsp snipped fresh chives
- 1/8 tsp ground white pepper
Mix all the spices in a bowl and add one stick of melted butter to make a paste. Please give it a nice stir and set it aside.
Place your sirloin roast in a baking tray and tie it up with a butcher's twine. Rub the spice paste on the pot roast evenly with your hands.
Allow the roast to sit at room temperature for about 6-8 hours. It helps to marinate your beef cut, so it cooks evenly.
In the meantime, combine all the sauce ingredients in a small sauce bowl, cover, and refrigerate.
Once the required time passes, preheat an oven to 350°F and cook your Sirloin Tip Roast for about 1-1 ½ hours.
Remove the roast from the oven and cut off the twine. Then let it sit for about 10-15 minutes before slicing it into slices and serving it with the sauce.
