- 4 medium-sized Russet potato
- 2 tbsp butter
- Sour cream
- Shredded cheddar cheese
- Scallions or green onion
- Kosher salt
- Black pepper
Preheat and over to 350 and position the oven rack in the middle of the oven. Then line the baking sheet with a piece of aluminum foil.
Wash potato under cold running water with a stiff brush. Dry them thoroughly on a paper towel and poke 12 small holes over each potato with a fork. It helps excess moisture drain. Rub each potato with butter generously and sprinkle with salt and pepper. Place the potatoes on the hot baking sheet, but make sure they are on the middle rack.
Bake for about an hour and 15 minutes until the potato skin gets crispy golden brown, and the insides are tender.
Take the potatoes out of the oven and cut a small slit into one end of each potato to create a dotted line on the potato tops. Then pierce through the potato at intervals using a pairing knife until you reach the bottom. Serve it immediately with optional toppings, like sour cream, butter, shredded cheddar cheese, cream cheese, bacon bits, or green onions.
