Ingredients
  
  • 4 medium potatoes (peeled)
  • ¼ cup butter
  • 1 white onion (chopped)
  • 1 garlic bulb
  • 2 tbsp olive oil
  • ¼ cup Cheddar cheese or Parmesan cheese (grated)
  • ¼ cup milk (2%)
  • ¼ cup sour cream
  • ¼ tsp pepper
  • ½ tsp salt
Instructions
 
  • Preheat the oven to 425°F. Then peel the skin from the garlic bulls, but don't separate the cloves, and remove the top of the garlic. 
    Pour one teaspoon of oil into each clove, cover with foil and bake for about 30-35 minutes until the garlic gets soft.
  • Over low heat, add the chopped onions and the remaining oil to a big skillet. Stirring regularly; cook for 15-20 minutes or until they are golden brown. 
    Remove the skillet from the stove and process onions with a food processor until smooth. 
  • Add water to a big saucepan and add the potatoes. Allow potatoes to boil, and there reduce the heat. Cook uncovered for about 15-20 minutes. 
    Discard the water, and add butter, sour cream, milk, cheese, onion, softened garlic, salt, and pepper to the cooked potatoes. Mash the mixture until smooth.
    Serve the loaded mashed potato with any of your favorite sides, and enjoy.
