Ingredients
  
For the melt
  • 2 boneless, skinless chicken breasts
  • 2 cups shredded cheddar cheese
  • 4-6 large flour tortillas
For the marinade
  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp ground black pepper
  • 1 tsp salt
  • ¼ cup lime juice
  • 1 tbsp Worcestershire sauce
  • 2 tbsp apple cider vinegar
  • 1 tbsp olive oil
For the chipotle sauce:
  • ¼ tsp onion powder
  • tsp paprika
  • tsp salt
  • ¼ tsp sugar
  • ¼ tsp cumin
  • ¼ cup sour cream
  • ½ tsp chili powder
  • 2 tbsp chipotle in adobo
Instructions
 
  • Prepare the chicken. Combine all the marinade ingredients in a zip lock bag and mix it up. Add the chicken, seal the bag, and shake until the chicken is fully coated in the marinade.
    Since chicken is the main ingredient of our Chicken Chipotle Melt from Taco Bell, give it some time to sit. Refrigerate it for at least 4 hours or, even better, leave overnight.
  • Prepare the chipotle sauce. Combine all of the marinade ingredients in a medium bowl, mix, and leave for 1 hour.
  • Time to grill. Grease the grates of your outdoor grill and heat it up to medium-high heat. Place your chicken breasts onto the grates and grill for about 7-8 minutes per side until it is well browned and saucy.
    Note: pay attention to the temperature, as chicken’s internal temperature should reach 165 degrees. Once cooked, remove the chicken from the grill and let it rest for 5 minutes. Then slice it into thin strips.
  • Though the original recipe mentions a grilled chicken, not everyone has an outdoor grill. But it doesn't mean you won’t have a chance to taste a perfectly flavored Chicken Chipotle Melt.
    Instead, heat up a large skillet at medium heat, add your chicken breasts, and cook until lightly brown for about 3-4 minutes per side. Pro tip: if you have some bacon, cook it up before adding the chicken breasts. The bacon fat will give the chicken some smokiness or a “grilled effect”.
  • Assemble your perfect chicken chipotle melt. Place one tortilla in a large skillet over low heat and spread a thin layer of chipotle sauce on top.
    Top it off with ¼ of cheese and ¼ of chicken. Once the cheese has melted, remove it from the skillet and let the bottom cool. Roll up your chicken melt and repeat with the remaining tortillas.
